FRIDGE TACOS

There was a serious dearth of food in my fridge as well as money in my wallet. What oh what was a girl to eat? Not to mention that Tony and I were hungry and wanted something incredibly delicious.

Things in Natalie’s Fridge: half a red pepper, mushrooms, spinach, scallions, cheddar, dressings and condiments

Things in Natalie’s Freezer: corn, lima beans, grouper fillets (that Tony has decided are nasty and will probably remain there forever), a lone veggie burger, pita

Things in Natalie’s Cupboard: Flour, vegetable shortening, old mashed potato flakes, half a serving of Honey Bunches of Oats, vanilla protein powder

What would you have done?

I made vegetable tacos

Tortillas- The recipe goes like this-
-2cups flour
-¼ cup vegetable shortening (I use less because they came out a little oily the first time I suggest around 1/6 cup)
-1tsp salt
-¾ cup hot water.
Mix together until doughy. Knead for 4-6 min, roll into 8 wee balls and let rise for 20 min. Roll wee balls out into flat rounds (I have been using cups does anyone have a spare rolling pin). Heat skillet over medium-high heat and carefully place tortilla in the pan. When it starts to get a little puffy (5-10 sec) flip it and cook another 5 secs on the other side. MMMM fresh tortillas.

Filling- Heat 1tbsp vegetable oil with cayenne pepper and chili powder. Throw in 1 clove garlic diced, add mushrooms, spinach, and frozen corn. Cook till spinach is wilted and corn is done. Dice red pepper, slice some scallion rounds (now that I think about it, they would have been really good inside the tortilla dough) grate some cheddar. Sprinkle on some El Tapito.

I don’t know if everyone out there has been watching Planet Earth or not but everyone should. That show is brilliant. I have also found a video that will make me eternally happy. It is a snipped from the Jungles episode. The episode began with various Birds of Paradise doing their mating things. This bird is my new best friend. Enjoy.

Ack! Throw out the nasty grouper filets! (Check with Tony first, of course.)

Dad likes tilapia. Won't even try most other fish. Used to love salmon but won't make it anymore.

My dad once made "unforgettable soup." I don't remember what was in it, but it was good. And unforgettable. Basically, I think he took whatever was in the refrigerator and put it in a soup. My mom was mad, because of course she made dinner all the time and we always forgot all about it, but my dad cooks--just one time--and it's "unforgettable."

Go figure.

Very resourceful of you!! I probably would have ordered pizza. But, that's why I am fat. My mom used to make "goulash" when there was nothing to eat but odds and ends. We hated it.

Planet Earth is incredible. I could watch it for days.

yeah you're much more resourceful than I am. I also would have ordered pizza or ate cold cereal.

you'd probably make miracles with the scraps in my fridge.

We just got the series from netflix. My oldest starting laughing hysterically when we saw the six plumed bird of paradise. I tried to find the video but found it was removed. Crazy right.
You are a resourceful culinary master. That sounds delicious.

Mom- See unforgettable soup is obviously the most unforgettable meal you ever had.

BA- I sadly didn't have money to order pizza or I sure would have too.

Impressive, Natalie. I would not have gone to the effort to make such a delicious meal. Like your other commentators, I would've ordered in pizza or Indian or Chinese food.

That said, your alternative was far more ingenious and healthier. Brava! :)

how does he do that magic transformation with glowing bits and everything?!?!

i used wine bottles until i got a rolling pin.

it works nicely and i didn't feel like i was going to break it like i would with my glass wear.

i need to go shopping soon too.

I usually just go for PB&J, or grilled cheese, or a bowl of cereal or some toast. Very resourceful. Is there a chance for a show on the Food Network?

Mr. Yen and I had seven packages of Turkey Burgers in our freezer. They were the really weird rubbery Purdue fillets, and they cook up kinda grey. He defrosted all seven packages and made a bunch of gray food for the week.

He uses a minimum of four hot sauces on any food, so the grey turned to red quickly.

I ate none of it.

I've always steered clear of food with the word 'vegetable' in the title, but those tacos sound pretty good ;-)

Mrs L- I was happy with the decision. It made great leftovers too!

Dave- luckily my rolling glasses are plastic. Isn't he just adorable

Laughorist- Sadly I didn't have any of those foods. I would love to be on food network on occasion but the pressure of a show would be awful.

Thinker- Sometimes hungry is ok. That day no way.

Kim- Sometimes men put things in the freezer that simply don't belong.

Little things- I try :)

Michael- Like fruit, veggies can be delicious.

oh my goodness . . . so, i didn't really get the full effect of the bird video when i saw it on your computer. but i did this time and it was freakin' awesome (did i get that phrase from you?). i had no idea what you were talking about when you said it turned into a smiley face. but i do now. it really was a smiley face. and it was pretty fantastic.
