MANIC GREEN

The Manic Monday word for today is Green. This word allowed me to combine Manic Monday with Foodie Friday. I am going to post one of Monica’s greens recipes, although I do things slightly different, because I like chewing garlic and onions and she doesn’t. She has another greens recipe that is reportedly better than this one and involves v8 instead of or in addition to vegetable stock but I haven’t made that one with her and would hate to mess it up.

While all my recipes are pretty lax on exact measurements, this one is going to be even more so. It’s all about doing things to taste and these greens taste delicious.

Monica’s Greens Recipe #1 (with modifications a la Natalie)

-1 sweet (Vidalia) onion chopped
-6 cloves garlic (whole)
-2-3 bunches of collard greens rinsed and torn
-2-3 cups spinach rinsed
-2 red tomatoes cut in wedges
-2 green tomatoes cut in wedges
-1 red bell pepper diced
-1 yellow bell pepper diced
-A bunch of vegetable sock like 4 cups or so
-Cumin- a whole lot
-Curry powder- a lot
-Cayenne Pepper- a good amount
-Garlic powder- a little (because the cloves will be very mild when done)
-Salt & Pepper- to taste
-Chili Powder- a little
-Mustard powder- a dash
-1tbsp olive oil
-Hot sauce- to your liking (a good amount)

-Put olive oil in a large pot and heat over medium
-Add onion and about half of the spices and sauté for 4 minutes
-Add peppers and sauté for 3 minutes
-Stir in tomatoes, greens, and spinach stir well
-Add vegetable stock and garlic cloves stir well
-Bring to a boil and then turn down to a simmer (this should make the garlic cloves nice and mushy so they break apart during stirring and give the whole dish a very mild garlic flavor)
-Give a taste and add the rest of the seasonings until delicious
-Let cook 20 minutes or so stirring occasionally
-Taste again and adjust seasonings if needed

Apparently, Joe Rogan is a funny stand up comic. I never would have guessed but Tony is watching him and is laughing. I almost always laugh at the same things as Tony. Like Joe Rogan calling Bin Laden a comic book villain because he is a billionaire and lives in a cave and every time he almost gets caught he mysteriously disappears. This is hilarious to me. I would not have expected it from Joe Rogan.

Time to out the unguessed songs of last week.

Wow! You apparently like food as spicy as I do. That recipe sounds delicious. Does Tony like food that spicy too? I find that to be a problem sometimes-- no one around me-- wife, kids, etc. likes food nearly as spicy as I like to make it.

That sounds just danged good. I would have to have three bottles of antacid to keep the garlic under control.... but that sounds good enough to be worth it.

Johnny- Tony likes spice a lot as well. Most of my close friends are spice heads to a certain extent.

Tegdirb92- I thought it worked out pretty well, thanks!

Jamie- It will bite back but since it is in a nice juicy broth it isn't all that spicy...well maybe it is.

Meloncutter- You can always cut down on the garlic. Monica makes it with none.

Phil- I had to remind myself what that song was this morning. Good think I write them down.

Trying to figure out in the early days what I could prepare for my hub, I tried collard greens which he hates it turns out and I love love love.

Sounds so great.

P.S. You're the only other one that thinks Closer is a love song.
