FOODIE FRIDAY- PORTOBELLO STEAK

I think my readers must think I live only for the mushroom. This is not true. I have merely cooked some rather delicious mushrooms lately. Without further ado, I give you Portobello Steak.

Marinade:
-¾ cups olive oil
-1/8 cup soy sauce
-1 tbsp red wine vinegar
-Juice of one lemon
-3 cloves garlic thickly chopped
-Many sprigs of rosemary
-Enough water to cover the mushrooms

However many large Portobello caps you need (1 per person)

-Soak mushrooms in marinade overnight
-Grill or cook in a sauté pan over med-high head
-Serve with steak sauce on the side.
Enjoy

I served this with the Spaghetti Squash Pomodoro from last week to have a very filling meal that, according to sparkpeople.com consisted of about 167 calories, 26g carbs, 6g fat, and 5g protein (1 mushroom, 1tbsp steak sauce, and 1.5 cups squash).

Sounds delicious, but 3/4 cup of olive oil? That seems to be an awful lot. I'm too cheap to use that much.

Brooke- It was so strange because I spent my entire life hating that song. I'm a little surprised you didn't get #2.

Lord Omar- It is a lot but the mushrooms are really big. I had to add well over two cups of water to the marinade to cover them completely. I fear if I used less they wouldn't get as much flavor. then again, it might not hurt either. I also guesstimate all my recipes so it could have been less.

Oooh...that does sound very very delicious. I also have mushroom love, be it the shittake, the portabella, enoki, or plain white kinds.

That said, I have lawn mushroom phobia; I can't handle seeing faerie ring mushrooms or other close-growing bumpy fungal varieties. Those give me the heebie-jeebies.

#4 is called "Speak Low". It's an old standard (I don't know who wrote it but could look it up if you like) and has been sung by a zillion people. Including me, in my high school choir.

The mushroom sounds great. We are going to have Morningstar Farms sausages and garden peppers with fresh garden herbs over whole wheat pasta tonight. Mmm! But we're still waiting for the first ripe garden tomatoes.

Yum. I've always had much love for the mushrooms myself, particularly the portobello. This recipe sounds super yummy and anything that delicious with that few of calories is fantastic!

I hate to say this, but that recipe sounds really yummy for real steak, too. I might have to give it a try. While I might like the portobello option, you know my picky family might not! :D

I love Mushrooms. There's a guy at our farmer's market that sells really excellent shitake, maitake, and oyster mushrooms. He has Portabellos too, but I haven't bought them. I'm going to do your recipe this weekend!.
